Egg Layered Casserole

The Six Sisters Poppy Seed Muffins compliments this dish well.

Saute' 1C. sliced mushrooms, 1/3 C. diced onions and 4 Tbl. butter. In a second skillet heat 1 can cream of mushroom soup, 1 Tbl. milk and 1 Tbl. marsala wine. Shred 1 C. cheddar and 1 C. monterey jack/jalapaeno cheese. Beat 18 eggs, dash of parsley, black pepper and dill weed. Pour into mushroom/onion mixture. Cook 2/3 of the way. Layer a 8 1/2 x 11" casserole dish with 1/2 of the egg mixture, 1/2 of the soup mixture and 1/2 of the cheese. Repeat layers and sprinkle top with paprika. Bake at 300 for 35 minutes. Serves 12.
